Almond Poppy Seed Cookies

My husband and I are house/pet sitting my parents place while they are out of town for the week.  We love my parents house. They have the BEST kitchen and lots of property so the dogs can run and play all day if they want!  Over the weekend I got my grandmas cookbook out and started browsing through her recipes to get some inspiration. Talk about memory lane! It was hard to choose where to start.  I remember these poppyseed cookies very well.  Well, I remember the frozen version.  I swear my grandma froze everything. Cheese, bread, cookies, anything she could!  These cookies are so simple to make and I love the almond flavor to them!

Ingredients
  1. 2 eggs
  2. 3/4 cup vegetable oil
  3. 1 cup sugar
  4. 1 tsp. vanilla
  5. 1/4 tsp. almond extract
  6. 3 1/4 cups flour
  7. 2 tsp. baking powder
  8. 1/8 tsp. baking soda
  9. 1 tsp. salt
  10. 1/4 cup poppy seeds
Instructions
  1. Preheat oven to 350 degrees F.
  2. In medium bowl, sift together flour, baking powder, baking soda, salt and poppy seeds. Set aside.
  3. Blend together eggs, oil, sugar, vanilla, and almond extract.
  4. Gradually add flour mixture and stir until just combined.
  5. Roll dough on lightly floured surface to about 1/4 inch thickness.
  6. Cut out cookies using any cookie cutter you like.
  7. Place onto ungreased baking sheet about 2 inches apart and and sprinkle tops with sugar.
  8. Bake for 15 minutes. Remove cookies to cooling rack immediately.

    I am stilling laughing … yes Grandma froze nearly everything! These cookies were made as often as most families do chocolate chip cookies.
