Baked Chicken Fajitas

Saying I LOVE mexican food is an understatement, but I don’t make it often as my husband isn’t a huge fan of it. He can’t resist a good fajita though, and when I across this recipe a few months ago, it became our top “Mexican dinner” recipe.  I love it because you throw all the ingredients together and bake! Simple as that. I mean really, you can’t mess it up. It is so good and EASY and can be healthy (if you don’t doll it up with goodies). BONUS: It makes for great breakfast burritos the next morning; just add scrambled eggs!

What you’ll need:

1 pound boneless, skinless chicken breasts, cut into strips

1 15 oz. can diced tomatoes

1 4 oz. can diced green chilies

1 medium onion, sliced

1 large bell pepper, seeded and sliced

2 Tablespoon olive oil

2 teaspoons chili powder

2 teaspoons cumin

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon salt

Tortillas

 

What you’ll do:

Preheat the oven to 400 degrees.

Grease a 13×9 baking dish

Mix together chicken, tomatoes, chilies, peppers, and onions in the dish

In a small bowl combine the oil and spices

Drizzle the spice mixture over the chicken and toss to coat

Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender

I love that you can use or add whatever veggies you have! I like to add mushrooms and jalapeño’s.
