Baked Meatballs

Baked MeatballsI was craving a good pasta dish, but keeping up with my healthy dinner vow this week I needed to stay away from it.  Kaysha, over at That Comfort Girl, posted a great recipe last week using spaghetti squash and it got me motivated to try it. I have never cooked with it before even though I have an endless supply of it during the garden months as my dad grows it every year.  I didn’t have any spaghetti sauce so had to get creative with what I was going to pair with it. These easy baked meatballs is what I came up with.  They are so flavorful, I just drizzled a little olive oil over top. These would of course taste fabulous over spaghetti noodles 🙂

Baked Meatballs

  1. 1 lb. ground beef
  2. 1 egg
  3. 1 small onion, diced
  4. 1 tbsp. chopped fresh basil
  5. 1 6 oz. can tomato paste
  6. 1 tbsp. worcestershire sauce
  7. 1/4 tsp. salt
  8. 1/4 tsp. pepper
  1. Preheat oven to 350 degrees F. Line baking sheet with foil and set aside.
  2. In medium bowl, mix all ingredients until fully combined.
  3. Roll heaping tablespoonful of mix into balls.
  4. Bake for 15-20 minutes or until fully cooked.

      It was good. I prefer zucchini “noodles” as better alternative though. But I like that one squash gave me plenty of leftovers for other meals. I’ll cook with it again but maybe find a recipe that the squash is blended in more.

    That looks so yummy! I love to mix 2 tbsp. of hummus in with my spaghetti squash, for flavor – then I’ll top it with seasoned ground turkey meat. It’s quick, healthy, and filling. Thanks for the shout out, sista! Have you tried the taco bake yet? The spaghetti squash it more blended in and flavorful.
