Beef Pot Pie

Beef Pot PieI stopped by my sister’s after work last week and lucky for me, just in time for dinner! She made beef pot pie which was new for me.  I’ve always had it with chicken.  It was SO good, I asked her for the recipe because I wanted to share it with you. She gave me her pie crust recipe to go with it but I ignored her forewarning and used store bought crust instead. I would not recommend this. Of course it was a little easier to use the pre made crust, but it did not taste the same.  We made it last night the “right way” and I couldn’t stop eating it!

What you’ll need:

1 pie crust
1 lb. ground beef
1 bag frozen veggie mix (carrots, peas, green beans and corn)
2 cans cream of chicken soup
1 tbsp. all purpose seasoning
Salt and pepper to taste

What you’ll do:

Preheat oven to 350 degrees F.
Make pie crust as directed. Bake bottom layer of crust for 8 minutes. Set aside.
Brown ground beef until fully cooked.
Meanwhile, cook veggies as directed.
In medium bowl, mix together cooked ground beef, veggies, cream of chicken, seasoning, salt and pepper.
Fill pre-baked pie crust with beef mixture.
Top with 2nd pie crust and poke holes to vent.
Bake for 25 minutes.

      Thank YOU! It was my first time making it, because homemade crusts have always seemed “too hard” to make. But it was so easy and tastes amazing. My sister uses it anytime she’s making a pie and now I will too!
