It’s Thursday (which is my Friday) and I couldn’t be happier!  I’m so excited for the weekend.  We’ll be busy but I’m looking forward to sleeping in.  My parents recently went on a trip to Arizona and they brought me home some jalapeño hot sauce.  They know me so well. I get so excited to try to new ones and this was no exception.  I couldn’t wait to try it but had nothing planned for dinner. I had some chicken thawed so I started rummaging through my pantry to see what I could make.  This dinner was so easy to throw together and tasted great!

Southwest Chicken Rice Bowl

Ingredients
  1. 1 1/2 lbs. chicken breast
  2. 1 cup rice
  3. 1/2 cup corn ( I used canned)
  4. 1/2 cup black beans
  5. 1 small can rotel original
  6. 1/2 cup diced pepper
  7. 2 tsp. taco seasoning
  8. 2 tsp. chipotle seasoning
Instructions
  1. Cook rice per directions on package.
  2. Meanwhile, dice chicken into 1 inch cubes. Cook in large skillet over medium heat, about 15 minutes, stirring halfway through.
  3. Once fully cooked, drain any excess juice and return to stove.
  4. Stir in all remaining ingredients, including cooked rice. Cover and cook on low for 10 minutes.

Happy Monday!!  We had a busy weekend and I’m sad that it’s over already.  We finally finished our painting projects inside and now we’ve moved to the outside.  Our house has needed a paint job for a couple years but it’s something we’ve put off.  Since we built a fence last summer and re-did the front yard with a cute cedar picket fence, the faded blue-gray paint is standing out much more.  We do pretty much everything ourselves when it comes to the house so of course we will not be hiring this project out. Any by “ourselves”, I mean my husband.  I mean, I help out as much as I can but really, he’s much better at it than I am. 😉

With a busy weekend behind me and a full week ahead, I really wanted to make some meals that we could eat on all week.  Breakfast is the hardest for me because I never have enough time in the morning to make it.  I always just grab a banana on my way out the door.  Which is great, except that I am starving by 9am! (I leave the house at 6:30am.)  This is a really easy “throw together” meal that is packed full of nutrition and will keep you full until lunch!

Ingredients
  1. 1 lb. chicken sausage
  2. 8 eggs
  3. 3 tbsp water
  4. 1 red pepper, diced
  5. 1 cup chopped broccoli
  6. 1 cup fresh spinach
  7. 1/4 cup diced green onion
  8. 1/4 tsp. salt
  9. 1/4 tsp. pepper
Instructions
  1. Preheat oven to 350 degree F. Grease an 8 inch square pan and set aside.
  2. In skillet over medium heat, cook chicken sausage (about 10 minutes).
  3. Meanwhile, in large bowl, whisk together eggs and water.
  4. Stir in remaining ingredients, including cooked sausage and pour into prepared pan.
  5. Bake for 30-35 minutes.
Notes
  1. I was trying to keep this meal "light" but cheddar cheese would be great addition!

Crockpot Thai Chicken

Crockpot Thai ChickenThai food is one of my favorite things to eat.  I could probably eat chicken pad thai everyday.  Lucky for me, we have an excellent thai restaurant walking distance from work!  This is a “copycat” recipe of one of their dishes.  It turned out pretty close to the real thing and so yummy! This was a last minute dinner idea and I didn’t have any rice noodles or sprouts so we had it over brown rice and it was delicious! 

Crockpot Thai Chicken

Ingredients
  1. 1 1/2 lbs. chicken breast
  2. 1 red pepper, sliced
  3. 1 small onion, sliced
  4. 3/4 cup peanut butter (creamy for chunky)
  5. 1/4 cup soy sauce
  6. 1/2 cup coconut milk
  7. 1/2 cup chicken broth
  8. Juice of 1 lime
  9. 1 tbsp. sriracha
  10. 1/2 cup crushed peanuts
Instructions
  1. Place sliced peppers and onions in bottom of crockpot.
  2. Lay chicken on top.
  3. In medium bowl, mix together remaining ingredients and pour over chicken.
  4. Cook on high 4 hours.
  5. Once cooked, shred chicken and stir. Serve over rice or noodles.

Well, we are almost through the week.  So close to the weekend I can almost taste it.  Can you tell it’s been a long week for me? 😉  Usually by Thursday evening I am a little burnt out and never in the mood to cook dinner.  To keep up with my “healthy dinners week” I can’t just come home and open a blue box of mac & cheese (no matter how tempting it is). My sister gave me this recipe and it is about the easiest dinner you can make.  The original recipe was from a slow cooker freezer meal post from Six Sisters’ Stuff. (Which you should really check out, lots of good recipes!) I love it because it only has 4 ingredients.  My favorite kind of dinner –  quick, easy and full of flavor!

Maple Dijon Chicken Thighs

Ingredients
  1. 11/2 lbs. boneless, skinless chicken thighs
  2. 1 cup dijon mustard
  3. 1/2 cup maple syrup
  4. 2 tbsp. red wine vinegar
  5. Salt & pepper to taste
Instructions
  1. Preheat oven to 350 degrees F.
  2. In medium bowl, mix together mustard, syrup, vinegar, salt and pepper. Add chicken and coat completely.
  3. Place in baking dish and bake for 30 minutes or until chicken is fully cooked.

So after a weekend of baking up a storm I decided I really need to focus on some health conscious meals.  Seriously, those Mounds brownies I made are all gone. Plus we polished off a batch of my oatmeal cinnamon raisin cookies. I know, bad, right? I really do enjoy eating healthy foods but I enjoy baking even more! 

I vowed our dinners this week wouldn’t include any cookies 😉  Here’s an easy and flavorful dish that’s super good for you with lots of veggie goodies.

Balsamic Basil Chicken

Ingredients
  1. 1 lb. boneless, skinless chicken breasts
  2. 1 cup fresh basil
  3. 1 tsp. balsamic vinegar
  4. 1 tbsp. olive oil
  5. 2-3 garlic cloves
  6. 1 cup cherry tomatoes
  7. 1/2 cup sliced mushrooms
  8. Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F.
  2. Combine basil, vinegar, oil and garlic in blender. Puree until smooth.
  3. Place chicken breasts in baking pan and cover with basil mix.
  4. Top with tomatoes, mushrooms, salt and pepper.
  5. Bake for 30-40 minutes or until fully cooked.
