My dad’s garden is in full bloom and I’m so excited because that means fresh veggies for us!  He brought over some zucchini this weekend and I knew exactly what I wanted to do with it.  I’ve had double chocolate chip muffins on my list of “things to make” for quite a while.  I wanted a dense but moist muffin (like the Costco ones) and I thought the zucchini would be perfect for them.  It was. These muffins turned out amazing!

Double Chocolate Chip Zucchini Muffins

Ingredients
  1. 2 cups flour
  2. 1/2 cup cocoa powder
  3. 1 1/2 tsp. baking soda
  4. 1/2 tsp. baking powder
  5. 1/2 tsp. salt
  6. 1/2 cup butter, melted
  7. 1 cup sugar
  8. 2 eggs
  9. 1 tsp. vanilla
  10. 2 cups shredded zucchini
  11. 1 cup chocolate chips
Instructions
  1. Preheat oven to 375 degrees F. Line muffin tin with liners; set aside.
  2. In medium bowl, mix together flour, cocoa powder, baking soda, baking powder and salt; set aside.
  3. Beat together sugar and melted butter until fully mixed.
  4. Add eggs, 1 at a time, then vanilla.
  5. Gradually add flour mixture and mix until just combined.
  6. Fold in shredded zucchini and chocolate chips.
  7. Evenly pour batter into muffin tin and bake for 30 minutes.

Well, it’s safe to say that I have been on a major cupcake kick lately.  My poor family probably think I’m trying to get them fat.  I’m bringing them cupcakes every other day almost.  Sorry guys, I can’t keep them at my house! I have no self control.  I have today off so maybe I’ll whip up another batch. 

Anytime I see or eat something with limes I always think of my mom.  She loves them. I’ve been wanting to bake something like this for her for a while.  I had a lime that I needed to use so there I was figuring out what I was going to make.  Of course I decided on cupcakes.  This time I cut down my measurements to only make a dozen.  Usually, it’s 24. I chose a buttercream frosting with fresh lime juice and zest.  They turned out so good!  Eating one makes me wish I was in Mexico enjoying the beach and sunshine 🙂

 If you don’t have cake flour or heavy cream you can substitute regular flour and milk.

Step by stepThe consistency will be on the thicker side. Look at that pretty lime zest!

 Using a cookie scoop, it takes 2 scoopfuls for each cupcake to divide evenly.

 Let cupcakes cool completely before frosting.  This is the hardest part – waiting.

Coconut Cupcakes with Lime Buttercream Frosting

Ingredients
  1. 1 1/2 cups cake flour, sifted
  2. 1 1/2 tsp. baking powder
  3. 1/2 cup butter, softened
  4. 3/4 cup sugar
  5. 1 tsp. vanilla
  6. 1/2 cup heavy cream
  7. 2 egg whites
  8. 1 lime (You'll use a little zest for the cake)
For the frosting
  1. 1 cup butter
  2. 3 cups powdered sugar
  3. Juice of 1 lime and a little zest
Instructions
  1. Preheat oven to 350 degrees F. Line cupcake pan and set aside.
  2. In medium bowl, mix together flour and baking powder, set aside.
  3. Beat together butter and sugar until smooth.
  4. Add vanilla and mix until fully incorporated.
  5. Alternatively, add flour mixture and milk. Set aside.
  6. In new bowl, beat egg whites until stiff peaks form (about 5 minutes).
  7. Fold whites and zest of 1/2 lime into batter.
  8. Pour evenly into prepared cupcake pan and bake for 17-19 minutes.
  9. Let cool completely.
  10. To start the frosting, beat together butter and powdered sugar until smooth.
  11. Add juice of 1 lime and remaining lime zest.
  12. Beat on high until desired consistency. If you need, add heavy cream, 1 tsp. at a time.
  13. Frost cupcakes and enjoy!

How was everyone’s week?  Mine was good but so glad it’s the weekend!  We went out last night for a friends birthday and it felt great! We’ve been so busy with the house that we haven’t really made the time to enjoy a night.  Although it was a short night, we had a great time!  Staying out late is a rarity for me these days. Hmmm, I must be getting old 😉 I used to be able to stay up late and sleep in.  Now, no matter what time I go to bed I’m usually up by 7.  This morning was no exception. So we got up and started working on the backyard.  I came in to make us lunch and lost ALL motivation.  Like all of it.  My husband would have to drag me back outside if he wanted my help. I started to clean the house but wasn’t feeling that either.  

What did sound good was baking!  Way better than cleaning, right?  I went to the pantry to grab some ingredients but realized I was out of flour. Not good news for me.  I was dead set on cupcakes though so grabbed a box of yellow cake mix. I always have a box of cake mix for times like these. Or for times when I’m craving cupcakes but am too lazy to make the real thing.  I wanted to doll them up a bit so thought chocolate chips were a good idea. They were.  These cupcakes are super easy to make and taste so good.  Of course, you could always make the cupcake batter from scratch.  There’s a secret ingredient in the frosting that brings a great chocolate flavor and creamy consistency.

I’ve been obsessed with chocolate chips lately and these cupcakes were a great way to use them!

 

There’s Jell-0 chocolate pudding mix in the frosting recipe!  I love the texture it gives.

Chocolate Chip Cupcakes with Chocolate Buttercream Frosting

For the cupcakes
  1. 1 box yellow cake mix
  2. 2 eggs
  3. 1 cup milk
  4. 1/3 cup vegetable oil
  5. 1 cup chocolate chips
For the frosting
  1. 1 cup butter
  2. 3 1/2 cups powdered sugar
  3. 1 oz. box Jell-O chocolate pudding
  4. 1-2 tbsp. milk
Instructions
  1. Preheat oven to 350 degrees F. Line cupcake pan and set aside.
  2. In large bowl, mix together cake mix, eggs, milk, vegetable oil and chocolate chips.
  3. Pour evenly into cupcake pan.
  4. Bake for 17-19 minutes. (Check the directions on the box in case baking time is different.)
  5. Let cool completely.
  6. To start the frosting, beat together butter and powdered sugar until smooth.
  7. Add Jell-O pudding mix, powdered sugar and 1 tbsp. of milk.
  8. Beat until smooth. If needed add the other tbsp. of milk.
  9. Frost cooled cupcakes and enjoy!

Banana Cupcakes with Honey Cinnamon Frosting

Well, the painting fun continues.  I was planning on a nice, relaxing week off but seems to be otherwise. Don’t get me wrong, I’m excited to freshen up the house and start redecorating but I really want a day to do nothing. Nothing at all.  After today’s panting session was over I needed to decompress (painting multiple rooms & ceilings stresses me out), so a glass of wine and baking seemed appropriate.

I’ve been looking at these poor bananas getting more and more ripe every day for the last week.  I really had in mind to eat them but never got around to it.  Obviously baking banana bread came to mind but I’ve been on such a major cupcake kick lately that banana bread just wasn’t going to do.  So, to my cupcake book I went! These are a lighter *and by lighter, I mean physically, not nutritionally ;)* version of banana bread with a delicious frosting.  Seriously, this frosting is lick-the-bowl worthy!

Banana Cupcakes with Honey Cinnamon Frosting

For the cake
  1. 1 1/2 cups flour

  6. 2 cups mashed bananas (about 4 bananas)
  7. 2 eggs
  8. 1/2 tsp. vanilla
  9. 1/4 tsp. cinnamon
For the frosting
  1. 1/2 cup butter
  2. 1/2 cup cream cheese
  3. 1 tsp. vanilla
  4. 2 tbsp. honey
  5. 1/4 tsp. cinnamon
  6. 3-4 cups powdered sugar
  7. 1 tbsp. milk
Instructions
  1. Preheat oven to 350 degrees F. Line cupcake tin with cupcake liners and set aside.
  2. Whisk together flour, sugar, baking powder, baking soda and salt.
  3. Add mashed bananas, eggs, vanilla and cinnamon and mix until just combined.
  4. Pour evenly into lined cupcake tin.
  5. Bake for 25-30 minutes. Let cool completely.
  6. To start the frosting, beat together cream cheese, butter, vanilla, honey, and cinnamon.
  7. Add in milk and half of powdered sugar until just combined.
  8. Add remaining powdered sugar and beat for about 3 minutes, until smooth.
  9. Frost cupcakes and enjoy!
