Creamy Mexican Corn

This dish was kind of an accident.  Which happens sometimes in my kitchen.  This ended up being a good kind of accident.  I had dinner at a girlfriends house and she made this awesome Mexican corn dish.  Of course, I got the ingredient list from her so I could share it with y’all! When I went to the grocery store they were out of the cheese that was on the list.  I looked around for a while, then finally asked a gal at the deli to help me find a good substitute.  Apparently she was as clueless as me when it came to Mexican cheese because it was definitely not the same.  I needed a hard cheese and this cheese is soft.  Even though it didn’t turn out exactly like my girlfriends dish, it turned out great!  The cheese was melted down to make a nice creamy sauce.  I ate the whole thing in 1 day! ๐Ÿ˜‰

Ingredients
  1. 1 12 oz. bag frozen corn
  2. 1 tbsp. chili powder
  3. 1 tbsp. butter
  4. 2 oz. asadero cheese, diced
Instructions
  1. Cook corn according to stovetop directions on package.
  2. Stir in chili powder, butter, and cheese and cook for about 10 minutes, until cheese is melted.
  3. Enjoy!

Chicken Salad Stuffed TomatoesThis is hardly a “recipe” but I whipped this up for lunch and it was so good and easy I had to share with you!  I love this idea because you can pretty much put anything you want into this dish.  Tuna would be a good substitute for the chicken as well ๐Ÿ™‚

Ingredients
  1. 4 large tomatoes
  2. 12 oz. chicken breast (I had leftover rotisserie but you could use canned too)
  3. 1 hard boiled egg
  4. 1/4 cup diced celery
  5. 1 tbsp. green onion slices
  6. 1 tbsp. mayonaise
  7. 1 tbsp. spicy brown mustard
  8. Salt and pepper to taste
  9. Cheese for topping
Instructions
  1. Preheat oven to 375 degrees F. Line baking sheet with foil, set aside.
  2. Cut tops off tomatoes and remove seeds using a spoon.
  3. In medium bowl, mix chicken, egg, celery, green onion, mayo, mustard, salt, and pepper together.
  4. Fill tomatoes with mixture and top with a slice of your favorite cheese.
  5. Bake for 15 minutes, until cheese is melted.

Tomato Basil Soup

Tomato Basil SoupSo, my version of this recipe did not turn out nearly as pretty as the original. However, it sure is tasty and packed full of veggie goodness.  It is suppose to be a cold soup but I warmed mine up because it was too cold out not to. ๐Ÿ™‚  I love how easy it is – throw everything in the blender and viola! you have a healthy and delicious meal.  I mixed my leftover soup in with some spaghetti squash for lunch and it actually stuck with me! My favorite thing about this soup is that everything you put into it is fresh!

Ingredients
  1. 4 medium tomatoes, cut into fourths
  2. 1/2 cup diced red pepper
  3. 1/2 cup chopped sun-dried tomatoes
  4. 1 clove garlic, minced
  5. 1/4 cup diced onion
  6. 1/3 cup chopped fresh basil leaves
  7. 1/2 an avocado, diced
  8. Salt & pepper to taste
Instructions
  1. Put all ingredients into blender.
  2. Pulse until blended (about a minute).

Sriracha Roasted Broccoli

Sriracha Roasted BroccoliHappy hump day! Woohoo we are halfway through the week!  Here is another recipe from Pinterest – it’s from Food and Other Things. I would absolutely recommend following her. She has some great recipes! My sister just sent me the pin over the weekend and it sounded so good! It’s what got me thinking to actually make these recipes I pin.  What a concept, right? ๐Ÿ˜‰  I love anything with Sriracha so I was so excited to try it.  It turned out amazing! The whole pan was gone almost immediately.  This is another dish I will be making regularly.  It’s so easy and flavorful!

Sriracha Roasted Broccoli

Ingredients
  1. 2 large heads of broccoli, cut into florets
  2. 2 tbsp. soy sauce
  3. 2 tsp. sesame oil
  4. 1 clove garlic, minced
  5. 1-3 tbsp. sriracha sauce (I love spicy so I used 3. Use 1 if you want a mild dish)
  6. 2 tbsp. crushed peanuts
Instructions
  1. Preheat oven to 400 degrees F. Line baking sheet with foil, set aside.
  2. In large bowl, mix together soy sauce, oil, garlic, sriracha and peanuts.
  3. Add broccoli and toss to coat completely.
  4. Place onto baking sheet and bake for 15 minutes, stirring halfway.

Butterfly Birthday

It was my niece’s 2nd birthday last Friday and we celebrated with a party for her on Saturday.  My sister is the queen of throwing parties.  Every year she amazes me on what she comes up with. I tell her she needs to do this for a living.  She puts so much time, effort, and thought into making her girls’ birthdays perfect.  This year Alice requested a pink butterfly birthday party and it turned out so beautiful! It’s tradition that I spend the Friday before the party helping my sister bake, cook, and clean in preparation.  All of the recipes for the food we made were found on Pinterest (of course).  The drumsticks were uuuuuhmazing.  And I couldn’t stop eating the corn dip!  Needless to say, these recipes are keepers ๐Ÿ™‚

I loved these honey teriyaki chicken drumsticks.  They were full of flavor! The sriracha gives them a nice kick. We marinated them over night and cooked them on the BBQ instead of in the oven. Get the recipe HERE

 This creme brรปlรฉe cake from Martha Stewart took us SIX hours to make.  No joke, six hours. The cake was delicious, although we were a little disappointed with the caramel flavor as it wasn’t present enough.  But the consistency of the cake was fabulous and it turned out beautiful! We made chocolate dipped pretzel sticks for thank you treats for all the guests to take home.  We dipped the pretzel sticks in milk, dark, and white chocolate and drizzled with more chocolate and sprinkles.

 My oldest niece’s birthday is in April and is having a fairy party!  I’ve already got a little sneak peak into what my sister has planned and cannot wait to see it come together!  I’ll be sure to post pictures and recipes ๐Ÿ™‚
