The admins over at Spoonful of Foodies put together a “date night” menu.  Each of us chose a course and made something special.  I’m bringing to you a lovely coffee cocktail to cap off your night.

Ingredients
  1. 6 oz. hot coffee
  2. 1/4 tsp. cocoa powder
  3. 1 oz. whipped cream vodka
  4. 1/2 oz. half and half
Instructions
  1. Spoon 1/4 tsp. cocoa powder in the bottom of a coffee mug.
  2. Pour hot coffee into mug and stir to dissolve cocoa powder.
  3. Add whipped cream vodka and half and half.
  4. Gently stir and enjoy!
Notes
  1. You could substitute half and half for milk or heavy whipping cream if you have it on hand.

Crockpot Thai Chicken

Crockpot Thai ChickenThai food is one of my favorite things to eat.  I could probably eat chicken pad thai everyday.  Lucky for me, we have an excellent thai restaurant walking distance from work!  This is a “copycat” recipe of one of their dishes.  It turned out pretty close to the real thing and so yummy! This was a last minute dinner idea and I didn’t have any rice noodles or sprouts so we had it over brown rice and it was delicious! 

Crockpot Thai Chicken

Ingredients
  1. 1 1/2 lbs. chicken breast
  2. 1 red pepper, sliced
  3. 1 small onion, sliced
  4. 3/4 cup peanut butter (creamy for chunky)
  5. 1/4 cup soy sauce
  6. 1/2 cup coconut milk
  7. 1/2 cup chicken broth
  8. Juice of 1 lime
  9. 1 tbsp. sriracha
  10. 1/2 cup crushed peanuts
Instructions
  1. Place sliced peppers and onions in bottom of crockpot.
  2. Lay chicken on top.
  3. In medium bowl, mix together remaining ingredients and pour over chicken.
  4. Cook on high 4 hours.
  5. Once cooked, shred chicken and stir. Serve over rice or noodles.

Crockpot Stuffed Peppers

Crockpot Stuffed PeppersThe first time I had stuffed peppers was only about 3 years ago when we were visiting my sister-in-law in Montana. Her roommate, and good friend, Steph, made all of us dinner.  I loved them so much and couldn’t believe I had never tried them. I’ve made several versions of stuffed peppers over the last few years but this one is my favorite!

Ingredients
  1. 1 lb. ground beef
  2. 1 small yellow onion
  3. 1 cup cooked rice
  4. 1 15 oz. can diced tomatoes, undrained
  5. 1/4 cup diced jalapeños
  6. 1 cup off your favorite shredded cheese, plus extra for topping
  7. 5 large bell peppers (any color combo you like)
Instructions
  1. In medium skillet, cook ground beef with diced onion until fully cooked. Set aside.
  2. Meanwhile, cut tops off all 5 peppers and dice up one of them.
  3. In large bowl, stir together all ingredients.
  4. Stuff 4 peppers with mixture. And I mean STUFF 🙂
  5. Pour 1/3 cup water in bottom of crockpot.
  6. Align stuffed peppers in crockpot and cook on low for 4-6 hours.
  7. About 30 min before serving, top with a little shredded cheese.
Notes
  1. I used leftover brown rice, but you can use white, or even mexican style.
  2. Dice up those pepper tops and throw in the mixture.

Crockpot Buffalo Chicken Sandwich

I love Franks buffalo sauce. I can put it on almost anything.  I’ve seen recipes for buffalo chicken sandwiches all over the internet so decided I’d try it!  It’s such an easy dinner and tastes great!

Buffalo Chicken Sandwiches

Ingredients
  1. 4 boneless, skinless chicken breasts
  2. 1 12 oz. bottle buffalo sauce
  3. 1 ranch seasoning packet
  4. 1 tbsp. butter
  5. 6 slices monterey jack cheese
  6. Any kind of bun you like. I used multi-grain rolls but hoagie rolls are good too!
Instructions
  1. Line bottom of crockpot with chicken breasts.
  2. Stir in entire bottle of buffalo sauce and ranch seasoning.
  3. Cook on low for 6-7 hours.
  4. Stir in butter.
  5. Shred chicken and make into sandwiches!
Notes
  1. I like to add lettuce and/or tomato to mine.

Crockpot Applesauce

I’m back again, and bringing you one of my favorite crockpot recipes. It’s another 3 ingredient recipe that is perfect for potlucks, holiday dinners, or just because you deserve something delicious. It’s super easy, cheap, and can be prepared at home and transported in your crockpot to cook anywhere that you please. My crockpot applesauce tastes amazing warm, and is a great late night dessert.

8-10 large apples (enough to fill your crockpot)

1/4 cup of sugar

Cinnamon (to taste)

Optional Tools: Apple Slicer *Highly recommend*

edit1Start by slicing you apples, and then peel them using a sharp knife. Please do not cut off any fingers, it will ruin the applesauce. Continue this until your crockpot is full.

Sprinkle your sugar and cinnamon over your apples. I used 1/4 cup of sugar, and enough cinnamon to cover my apples. Turn your crockpot to high, cover with lid, and allow to cook for 5 hours. You don’t need to do anything now (not even stir, unless your impatient) except wait.

edit3Halfway through cooking my apples looked like this. I’m impatient, so I stirred them. Re-cover and allow to finish cooking. Your house/office should smell AMAZING by this point.

edit4After 5 hours, stir your apples (which will turn into applesauce before your eyes) and enjoy. You will be tempted to inhale this, but I am cautioning you, go slowly. Those apples are now a lava of deliciousness.
