I think my husband married me for my banana bread. It’s what he asks for whenever we have an outstanding IOU, or anytime there’s a holiday or it’s his birthday. I never make just one loaf because it would only last 3 minutes before he ate the whole thing, by himself, without a second thought to share. My Mom used to make this for me as a kid, and as my Sister and I started baking we began altering her recipe until it became what it is today. You’ll never throw away your browning bananas after you’ve tried this recipe. It’s so easy, and absolutely YUMMY!
Please excuse my photos, which are nowhere near as beautiful as Rene’s. The pictures of her food make me literally want to lick my screen. Photographing food is new for me, but I’m giving it my best shot!
1 Cup of Sugar
1 8oz. Package of Cream Cheese (room temperature)
1/2 tsp. Almond Extract (sweeter, nuttier flavor) OR Vanilla Extract
2 tsp. Cinnamon
2 Cups Bisquick Mix (I prefer the “heart smart” one. It makes me feel less guilty about the block of cream cheese.)
1/3 Cup Chocolate Chips (Optional)
What You’ll Do:
Preheat oven to 350 degrees.
In a large bowl (Or Kitchenaid mixer) cream sugar and cream cheese until light and fluffy.
Beat in Bananas, Eggs, Almond/Vanilla Extract, and Cinnamon.
Stir in Bisquick just until moistened.
Stir in chocolate chips. (Optional, but highly recommended)
Pour into greased 9x5x3-inch loaf pan.
Bake at 350 for 1 hour.
