This dish was kind of an accident. Which happens sometimes in my kitchen. This ended up being a good kind of accident. I had dinner at a girlfriends house and she made this awesome Mexican corn dish. Of course, I got the ingredient list from her so I could share it with y’all! When I went to the grocery store they were out of the cheese that was on the list. I looked around for a while, then finally asked a gal at the deli to help me find a good substitute. Apparently she was as clueless as me when it came to Mexican cheese because it was definitely not the same. I needed a hard cheese and this cheese is soft. Even though it didn’t turn out exactly like my girlfriends dish, it turned out great! The cheese was melted down to make a nice creamy sauce. I ate the whole thing in 1 day! 😉
- 1 12 oz. bag frozen corn
- 1 tbsp. chili powder
- 1 tbsp. butter
- 2 oz. asadero cheese, diced
- Cook corn according to stovetop directions on package.
- Stir in chili powder, butter, and cheese and cook for about 10 minutes, until cheese is melted.
