 Slow Cooker Chicken Noodle Soup

Happy Monday! Hope y’all had a great weekend! Mine was really good (and busy)! Not quite ready for it to end.  I always love a crockpot dinner but I think they are a must for Monday evenings!  Here’s a yummy chicken noodle soup recipe.   1. 1 lb. boneless, skinless chicken breasts
  2. 2 cups diced celery
  3. 2 cups diced carrots
  4. 1 small yellow onion, diced
  5. 1/2 tsp. salt
  6. 1/2 tsp. pepper
  7. 1/4 tsp. dried thyme
  8. 2 bay leaves
  9. 5 cups chicken broth
  10. 1 cup water
  11. 2 cups egg noodles
  1. Place whole chicken breasts in bottom of slow cooker.
  2. Top with celery, carrots, and onion.
  3. Sprinkle salt, pepper, and thyme over chicken.
  4. Pour in chicken broth and water.
  5. Place bay leaves on top.
  6. Cover and cook on high for 4 hours.
  7. Take chicken out and shred.
  8. Put shredded chicken back into slow cooker, add noodles and cook for another 10 minutes, or until noodles are tender.

    This looks so good, easy, and not bad for my “healthy eating” challenge. I’m gonna add these ingredients to next weeks grocery list for sure.
    Loved the sriracha (sp?) salmon last night, and we’ll be making that again very soon!! My husband would like to eat it 2+ times a week. Ha! ๐Ÿ™‚

      If you want to be REALLY healthy, take some of the soup out before you add the noodles. That’s what I used to do when I was eating clean ๐Ÿ™‚
