Crockpot Chicken Thighs

This is an easy crockpot dinner that tastes great!  I don’t usually cook with bone-in chicken thighs with skin but this recipe wouldn’t taste the same without them.  The crispy skin has so much flavor and the meat is so tender. Bonus, your house will smell amazing when you come to this cooking!


What you’ll need:

4 chicken thighs – bone-in, skin on

2 cups baby carrots

1 potato, diced

1 medium onion, sliced

1/2 cup chicken broth

1/2 cup cooking wine

1/2 tbsp. thyme

1 tsp. minced garlic

1 tsp. smoked paprika

1/4 tsp. salt

1/4 tsp. pepper

1 tsp. olive oil

What you’ll do:

Line bottom of slow cooker with sliced onions. Top with potatoes and carrots.

Combine, broth, cooking wine, garlic, and thyme in small bowl. Pour over veggies.

Heat oil in large skillet over medium heat.

Mix together paprika, salt, and pepper in small dish. Rub over chicken and cook in skillet about 3-4 min. each side, until browned.

Place chicken on top of veggies and cook on low 4 hours.

    I like chicken breast (boneless skinless) and my hubby likes the bone in thighs. Do you think you could combine the 2 in this recipe?

      Hi Chandra, yes boneless thighs will work for this recipe. You will not need to cook them quite as long if you use boneless.

      Hi Christopher,
      No, the chicken does not need to be covered with the liquid. I used a 6 qt crock pot but depending on the size of your chicken, I think any size would work.

    I have a larger size family and I assume that more chicken thighs could be added, that being said, more liquid is needed and an increase in cooking time, yes?

      Hi Christine,

      Yes, you’ll want to add more liquid. Possibly double the recipe? I would suggest cooking on low for 6-8 hours, depending on the size of your chicken thighs.
