Crockpot Chili

Well, it is officially fall here in the Northwest.  We’ve had such great weather lately, I {almost} forgot!  This time of year is always hard for me. Leaving for work in the dark and coming home in the dark *sigh*.  But it also means that it’s time to bring out the crockpot.   I love crockpot recipes. So easy, just set it and forget it!  And BONUS! – The smell when you walk into your house… *DROOL* We love chili and I’ve made my fair share of batches trying to find that “perfect” recipe.  Thanks to my mother-in-law, I finally found the “secret” ingredient to make our perfect chili…….chili seasoning in a packet! All those years of trying to conquer the perfect spice combo and all I had to do was buy it in a convenient little packet. And to top it off, I came across this amazing cornbread recipe to go with it.  (Seriously, it’s the most delicious, mouthwatering cornbread we’ve ever had.)


What you’ll need:

1 lb ground beef

1 small yellow onion

1 15 oz. can diced tomatoes, undrained

1 8 oz. can tomato sauce

I  4 oz. can diced green chilies (Or jalapeños if you like it spicy!)

I small red pepper, sliced

1 packet chili seasoning

What you’ll do:

Dice onion and cook with ground beef

Combine all ingredients to crockpot

Cook on low 4  hours

Garnish with WHATEVER you want!  My favorite is sour cream and cheddar cheese.
