Crockpot Enchilada Soup

This is one of those “Not sure what to make for dinner so I just throw a bunch of ingredients together” meals.  I had ground beef thawed but NO idea what I wanted to make.  I opened my pantry and fridge and came up with this easy dinner! It almost couldn’t get easier.

What you’ll need:

1 lb ground beef (I’ve used leftover chicken breast shredded up too, really good!)

1 small yellow onion

1 large can or 2 small cans enchilada sauce

1 15 oz. can corn, drained

1 15 oz. can diced tomatoes, undrained

1 4 oz. can diced green chilies

1 4 oz. can sliced olives

½ tsp cumin

¼ cup chicken broth

salt/pepper to taste

What you’ll do:

Dice onion and cook with ground beef.

Add all ingredients to crockpot and stir together.

Cook on low 4 hours.
