Crockpot Thai Ground Beef

I adapted this recipe from a great website that has a TON of good, healthy recipes.  She challenged readers to get past the “unappetizing” look of the photo and to try it. I did and it was amazing! I really love this dinner. It is SO flavorful!


What you’ll need:

1 lb. ground beef

1/4 cup green onion, sliced thin

2 tsp. minced garlic

1 tsp. ground ginger

1 tbsp. thai red curry paste

1 15 oz. can tomato sauce

1 tsp. lime zest

1 tbsp. soy sauce

½ cup coconut milk

2 tsp. lime juice

What you’ll do:

Brown ground beef, then add to crockpot with leek, garlic, ginger, red curry paste, tomato sauce, soy sauce and lime zest.

Cook on low for 4 hours.

Open lid and stir in coconut milk and lime juice.

Let cook for 15 minutes longer and serve.
