Hello all you gorgeous cooks! I’m Samantha, a Mom, Wife, DIY’er, Product Junkie, Interior Decorating Obsessed, Foodie, Traveller, and Author of PLAYDATES + PEARLS. I’ve been a stay-at-home mom for 3 years, and started my blog a few months ago as a creative space where I could feel like myself, not just a mom (even if only for an hour during nap time). I live in Austin, TX with my husband, our 2 year old daughter, and our yellow lab Aly. In true toddler fashion, my daughter is a picky eater, so I’m constantly trying to get creative with veggies and make sure our meals are healthy and something that we can all eat as a family. Today I’m going to show you a fool-proof meal that satisfies my husbands need for unhealthy foods, like pizza, while still providing my daughter a nutritious meal that includes a veggie. Pre-Made Pizza Crusts – 2 per package (I prefer thin crust)
2 medium-large Tomatoes
Basil (approximately 10 leaves)
Mozzarella Cheese (Shredded or fresh)
Bacon (I prefer Turkey Bacon)
1 tbsp. Olive Oil
Salt & Pepper to taste
NOT OPTIONAL: A glass of wine. Trust me, my pizza tastes better after every glass of wine.
Start by pre-heating your oven to 400 degrees. Place strips of bacon on a lined cookie sheet and bake until crispy.
Take your pizza crusts out of the package and place them on your pizza stone, or lined baking sheet (I always line my baking sheet because sometimes the egg mixture will overflow and gets stuck to the pan)
Lightly drizzle your pizza crust with olive oil. You can add chopped garlic to your olive oil if you prefer. Bake the crust (no toppings) for 3 minutes. This will crisp up your crust, because nobody likes soggy pizza.
Crack 2 eggs in a bowl and whisk together.
Remove crust from oven and layer thinly sliced tomatoes, mozzarella cheese, chopped basil, chopped bacon, and pour half of the egg mixture over each pizza. Salt & Pepper to taste.
Bake for 10-15 minutes or until egg mixture is cooked through, and crust is lightly browned. During this time I recommend you drink a glass of wine. 🙂
