If you’re looking for an easy and healthier side dish, here’s one! I found this recipe and adapted it slightly. These green beans are full of flavor! This recipe makes about 4 servings.
What you’ll need:
1 lb. green beans, ends trimmed
1 ½ tbsp. fresh dill, chopped
1 tbsp. minced shallot
1 tbsp. olive oil
1 ½ tbsp. lemon juice
1 tsp. Dijon mustard
¼ tsp. salt
¼ tsp. pepper
What you’ll do:
Steam green beans on stovetop for about 6 min. You want them to still be crispy.
Whisk remaining ingredients in large bowl.
When green beans are done, add to mixture and toss to coat.
Let stand about 20 minutes before serving to blend the flavors.
