Maple Dijon ChickenHappy Thursday everyone! Well, we are almost through the week.  So close to the weekend I can almost taste it.  Can you tell it’s been a long week for me? 😉  Usually by Thursday evening I am a little burnt out and never in the mood to cook dinner.  To keep up with my “healthy dinners week” I can’t just come home and open a blue box of mac & cheese (no matter how tempting it is). My sister gave me this recipe and it is about the easiest dinner you can make.  The original recipe was from a slow cooker freezer meal post from Six Sisters’ Stuff. (Which you should really check out, lots of good recipes!) I love it because it only has 4 ingredients.  My favorite kind of dinner –  quick, easy and full of flavor!

Maple Dijon Chicken Thighs

  1. 11/2 lbs. boneless, skinless chicken thighs
  2. 1 cup dijon mustard
  3. 1/2 cup maple syrup
  4. 2 tbsp. red wine vinegar
  5. Salt & pepper to taste
  1. Preheat oven to 350 degrees F.
  2. In medium bowl, mix together mustard, syrup, vinegar, salt and pepper. Add chicken and coat completely.
  3. Place in baking dish and bake for 30 minutes or until chicken is fully cooked.
