Happy Thursday everyone! Well, we are almost through the week. So close to the weekend I can almost taste it. Can you tell it’s been a long week for me? 😉 Usually by Thursday evening I am a little burnt out and never in the mood to cook dinner. To keep up with my “healthy dinners week” I can’t just come home and open a blue box of mac & cheese (no matter how tempting it is). My sister gave me this recipe and it is about the easiest dinner you can make. The original recipe was from a slow cooker freezer meal post from Six Sisters’ Stuff. (Which you should really check out, lots of good recipes!) I love it because it only has 4 ingredients. My favorite kind of dinner – quick, easy and full of flavor!
- 11/2 lbs. boneless, skinless chicken thighs
- 1 cup dijon mustard
- 1/2 cup maple syrup
- 2 tbsp. red wine vinegar
- Salt & pepper to taste
- Preheat oven to 350 degrees F.
- In medium bowl, mix together mustard, syrup, vinegar, salt and pepper. Add chicken and coat completely.
- Place in baking dish and bake for 30 minutes or until chicken is fully cooked.
