I’m not even a little bit joking about these being the best cookies I’ve ever had. I’ve had people track me down after I’ve made them just to get one. (Not going to call out names, you know who you are.) They are slightly crispy on the outside and chewy on the inside. Yep, my mouth is watering as I type this. I personally have been known to blow through a dozen in a night. Not something I’m completely proud of but not scared to admit it. It may happen to you. And bonus, you only need ONE bowl to make them. Ok, enough talking about it, lets BAKE THEM!
What you’ll need
1 cup butter, softened
¾ cup sugar
1 cup brown sugar, packed
2 tsp. vanilla extract
2 eggs
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
2 ¼ cup flour
1 cup shredded coconut
1 1/2 cup quick cooking oats
¾ cup raisins
1 tsp. cinnamon
TIP: If you don’t like coconut or don’t have it on hand, no worries, the cookies still taste AWESOME without it, just add a few more oats.
What you’ll do:
Preheat oven to 350 degrees F.
Cream together butter, sugar, and brown sugar until well combined.
Add one egg and mix until fully incorporated. Add second egg and vanilla, mix until fully combined.
Add baking soda, powder, and salt.
Add half of the flour and mix until it’s JUST incorporated. Scrape down the sides of your bowl and add second half of flour, mix until just incorporated. Overmixing will cause your cookies to be tough.
Add coconut, oats, raisins, and cinnamon.
Roll dough into balls about 1” diameter (or use cookie scoop).
Place dough balls onto lined baking sheet about 2” apart.
Bake for 8-10 minutes.
Let cool 15 minutes.
Makes 4 dozen cookies.













These cookies are delicious! I made some to bring to a party. They disappeared so quickly! Everybody loved them! They are by far the best oatmeal raisin cookies I’ve ever had!
