Orange Chicken Tenders

My husband and I go through ALOT of fruit. It’s one of our favorite things to eat, so I usually like to buy it at Costco. I went a little crazy there a couple months ago and ended buying enough fruit for the whole town! I hate wasting food and kept looking at the oranges slowing losing their life feeling a little guilty. I came up with a few recipes to use them up. Here’s a really easy and quick meal!


What you’ll need:

1 lb. chicken tenders

1 tsp. orange zest

Fresh juice from 1 orange

¼ cup chicken broth

¼ tsp. ground ginger

1 tsp. thai curry paste

What you’ll do:

Preheat oven to 350 degrees.

Mix orange zest, juice, broth, ginger, and curry paste in medium bowl.

Stir in chicken tenders. If you are planning ahead, marinate chicken in mixture for several hours. If you don’t have time to marinate, no biggie, they still taste great! Just adds a little more flavor if you do.

Line baking sheet with foil and line tenders so they are not touching.

Bake for 20-25 minutes (depending on thickness of chicken).
