Strawberry Surprise Cupcakes2Sunday baking is becoming a very popular trend at our house.  There’s something about a relaxing evening baking to end a busy weekend.  I haven’t made cupcakes in a while and was craving a fruit filled one.  I usually make raspberry cupcakes but I only had strawberries in the fridge.  I combined my favorite cream cheese frosting with my favorite vanilla cupcake recipe and filled them with a strawberry compote.  They turned out delicious and are super easy to make.  If you want an even easier version,  use a box cake mix for the cupcake.

For the cupcakes
  1. 3 cups cake flour
  2. 2 1/2 tsp. baking powder
  3. 1/2 tsp. salt
  4. 2/3 cup butter
  5. 1 1/2 cup sugar
  6. 1 1/2 tsp. vanilla
  7. 1 1/4 cup milk
For the filling
  1. 2 cups diced strawberries
  2. 1/3 cup sugar
  3. 2 tsp. corn starch
  4. 1 oz. water
For the frosting
  1. 1/2 cup butter
  2. 1/2 cup cream cheese
  3. 1 tsp. vanilla
  4. 3-4 cups powder sugar
  5. 1 tbsp. milk
  1. Preheat oven to 350 degrees F. Line cupcake tins and set aside.
  2. Sift together flour, baking powder, and salt. Set aside.
  3. Cream together butter and sugar until fluffy (about 3 minutes).
  4. Add eggs one at a time and vanilla.
  5. Gradually add flour mix alternating with milk.
  6. Pour into cupcake tins and bake for 18-20 minutes.
  7. Let cool completely.
  8. While cakes are cooling, start the strawberry filling. In medium saucepan, mix together strawberries and sugar. Cook on medium heat until boiling. Reduce heat to low and let simmer 15 minutes.
  9. Dissolve corn starch in water and pour into strawberries, stirring constantly until thickened (about a minute).
  10. Take off heat and let cool.
  11. To start the frosting, beat together cream cheese, butter, and vanilla.
  12. Add in milk and half of powdered sugar until just combined.
  13. Add remaining powdered sugar and beat for about 3 minutes, until smooth. Set aside.
  14. Fill cupcakes with strawberry filling using a piping bag and large star tip. Push star tip into cupcake. While removing, squeeze gently, filling cupcake with the strawberry filling.
  15. Frost cupcakes and enjoy!
  1. If the frosting seems too thick, add a little more milk. If it seems too thin, add more powdered sugar, 1 tbsp. at a time.
