Stuffed Chicken Breasts


 When it comes to food, I love anything stuffed! The more flavor combos the better!  These stuffed chicken are full of yummy flavor. And a little crunch.  Plus, they are super easy to make.

  1. 2 chicken breasts
  2. 1-2 tbsp. olive oil
  3. 1/2 tsp. garlic
  4. 1/2 tsp. salt
  5. 1/2 tsp. pepper
  6. 4 cups fresh spinach
  7. 1 egg
  8. 1 cup whole walnuts
  9. 1/2 cup grated cheese (your favorite kind)
  10. 2 slices cooked bacon, chopped
  1. Preheat oven to 350 degrees F and line baking sheet with foil.
  2. Chop walnuts in food processor. Set aside.
  3. Heat oil in skillet on medium heat. Add garlic, salt, pepper, and spinach and sauté (about 5 minutes).
  4. In medium bowl, mix together egg, walnuts, cheese, and sautéed spinach.
  5. Gently fold in chopped bacon.
  6. Slice a pocket into thickest part of chicken breast about 3 inches long.
  7. Stuff mixture until full.
  8. Place on greased wire rack on top of baking sheet.
  9. Bake for 30 minutes, or until chicken is fully cooked.
  1. If you don't have a food processor, place whole walnuts in large baggie and crush with rolling pin.
