 White Chocolate Cranberry Pecan Cookies Happy Friday everyone!! Hope you all had a good week!  I am so excited because we are finally going to be able to move back into our house today.  We’ve put a lot of work into it, and am looking forward to getting back to my normal routine.  We’ve been staying at my parents house the last few weeks while we finish it up and am SO thankful to them for letting us crash there.  Luckily we actually really like each other so it’s been fun.  But I can’t WAIT to get back into my kitchen and start bringing to life all my scribbled recipes I have in my journal. I did get a chance to bake these cookies that I’ve had in my mind for a while so here they are! DSC_0375

DSC_0386 If you do not have a cookie scoop, take rounded tablespoonful and roll into balls.

White Chocolate Cranberry Pecan Cookies

Ingredients
  1. 1 cup butter, softened
  2. 1 cup brown sugar
  3. 1/2 cup white sugar
  4. 2 eggs, lightly beat
  5. 2 tsp. vanilla
  6. 2 3/4 cup flour
  7. 1 tsp. baking powder
  8. 1 tsp. baking soda
  9. 1/2 tsp. salt
  10. 3/4 cup white chocolate chips
  11. 1/2 cup dried cranberries
  12. 3/4 cup lightly crushed pecans
Instructions
  1. Preheat oven to 350 degrees F.
  2. Mix together softened butter, brown and white sugar until just combined.
  3. Slowly add eggs, then vanilla.
  4. Whisk together flour, baking powder, baking soda and salt. In 3 increments, add into mixture.
  5. Stir in white chocolate, cranberries and pecans.
  6. Using a cookie scoop, evenly space dough onto ungreased baking sheet 2" apart.
  7. Bake for 8-10 minutes.
  8. Let cool on baking sheet about 5 minutes, then transfer to cooling rack.
