Zucchini Walnut Brownies

Zucchini Walnut Brownies Happy Friday everyone!!! I think it’s time to celebrate that it’s almost the weekend with these rich, moist, and totally to die for brownies.  I had a bunch of zucchini I needed to use up and was craving a good, homemade brownie.  So to allrecipes.com I went in search of a zucchini brownie recipe.  As usual, I found a GREAT one! Seriously, these are the best.  And bonus! They’re topped with homemade chocolate frosting.  Yuuuuuuuuuum.  I had to distribute these to family to get them out of the house otherwise I wouldn’t stop eating them until they were gone. I told you guys, I have a serious problem.

For the brownies
  1. 1/2 cup vegetable oil
  2. 1 1/2 cups sugar
  3. 2 tsp. vanilla extract
  4. 2 cups flour
  5. 1/2 cup unsweetened cocoa powder
  6. 1 1/2 tsp. baking soda
  7. 1 tsp. salt
  8. 2 1/2 cups shredded zucchini
  9. 1/2 cup crushed walnuts
For the frosting
  1. 6 tablespoons unsweetened cocoa
  2. 1/4 cup butter
  3. 2 cups powdered sugar
  4. 1/4 cup milk
  5. 1/2 tsp. vanilla extract
Instructions
  1. Preheat oven to 350 degrees F. Grease 9x13 baking dish, set aside.
  2. In medium bowl, combine flour, cocoa powder, baking soda, and salt and set aside.
  3. In large bowl, mix together oil, sugar and vanilla extract.
  4. Gradually add flour mixture until fully combined.
  5. Fold in zucchini until fully moistened.
  6. Spread evenly into greased baking dish and bake for 25-30 minutes. Let cool completely.
  7. To start the frosting, melt butter and 6 tbsp. cocoa powder together. Set aside.
  8. In medium bowl, blend together powdered sugar, milk, and vanilla extract.
  9. Stir in cocoa mixture and beat until smooth.
  10. Spread evenly over cooled brownies and top with crushed walnuts.
Notes
  1. I do not like my brownies overloaded with nuts so I just sprinkled the walnuts on the top. You can also mix them into the batter for more walnut flavor.
